ITunes in windows in VM, will not work, they locked it down. I have already tried this a year ago, at least. I set up my usb ports to been see in VM but ITunes is against anything LINUX. If that is indeed the case (and I see NO reason to doubt) then I suggest you use something else. AS far as I can tell iTunes only runs on Linux to the extent that it opens and you may be able to play some media -- in other words it's not possible to use it to work with an Apple device of any kind. I did, in the past, run a Windows virtual machine in VirtualBox which allowed me to get my first-generation iPad to work (that's how long ago it was) and I suspect that a virtual machine will still work for that kind of thing if you use it correctly.
You also should install (from the Software Center) the Ubuntu Restricted Codecs (it's called UBUNTU RESTRICTED EXTRAS).
